Chicken and Sausage Gumbo: This is my first attempt to make this dish from scratch, based on a number of recipes I found online. It’s absolutely delicious but insanely strong flavoured - I think I probably should have had my first sampling with some rice to cut it a bit. I couldn’t find andouille sausage anywhere near where I live so I had to substitute kielbasa instead (blaspehmy?). Besides the sausage, finding filĂ© powder in Toronto was a little bit of a challenge. I eventually had to go to Kensington Market to find some - thanks, House of Spices! I really need to find somewhere that makes authentic cajun gumbo so I can figure out if I’m anywhere near the ballpark for flavour, but I’d definitely make this again.
